Cast Iron Vs Stainless Steel - A Cookware Review

When it comes to the cookware that is found in kitchens today, you will find a good mix of stainless steel and cast iron cookware. Even most cooking shows that are on television use a variety of cookware to include the ones mentioned above. So how do you know which one is the best one to use?

In order to figure out which one is best for your cooking needs you should take a look at what each has to offer. Let's take a look at the stainless steel cookware first before getting into the cast iron cookware. Stainless steel pots and pans offer many benefits to cooking such as being stain, scratch and dent resistant. They are also much cheaper to buy then other types of cookware.

Stainless steel cookware is easily available and comes in a variety of styles. The down side to this type of cookware is that it is not a good heat conductor so it will not cook food evenly. Because of this, many stainless steel cookware sets come mixed with copper bottoms. They are not stick free so foods such as omelets, will stick to the bottom unless you coat the pan first.

Cast iron cookware has been around as long as we can all remember. Many people have special cast iron skillets that have been passed down from generation to generation as this type of cookware will last a lifetime. One of the best benefits is that if the cookware is seasoned correctly, it will form a non stick barrier that separates the food from the pan. Once this is done there is little to do to take care of the pans. It cooks food to perfection as it is an awesome heat conductor so the heat is evenly disbursed to all parts of the food. This cookware will last a lifetime if properly cared for and will give you perfect dishes each and every time as if you just bought it yesterday.

I worked in restaurants for many years before going into the federal gov't, and good pans or bad pans would show their true colours over time.

For those w/ any arm/wrist/finger troubles, know that this pan is comfortable to handle, but still may be a little heavy (a good sign actually), The handle is rounded is easier and "softer" to handle than the Sitram Commercial line. This pan is a powerhouse, if you will, and can handle and endure heavy use in the kitchen, which is why it is "commercial grade" in both name and quality.

I would recommend using only wooden spoons and spatulas in this pan. Pure virgin olive oil is the best to use to get the pan going when sautéing, but extra virgin oo is good for lighter cooking or when simmering. Using a wooden spatula (never metal) will keep things from sticking just fine -- scrape when necessary w/ the wooden spatula. Do not forget to keep your wooden spatulas/spoons/cutting boards oiled too. (See my other reviews for suggestions on this topic)

Oil sprays are not necessary and only last so long anyway. This pan will become a valued partner in the kitchen. It is a joy to use knowing that you are using a high quality item. It is good to hand wash these pans and to use a little bit of "Bartenders Friend" to keep them shining like new. It is also good not to use high heat, but rather middle heat zones for smooth cooking.

The bottom line is that this pan is perfect, and beats a tephlon or other nonstick pan in durability without trouble. In addition, unlike the nonstick pans, you do not have to worry about scratching it, no peeling of the coating, and best of all no chemical concerns leaching into your food -- there has been much debate/concern about this. I do not use nonstick pans for anything.

good fry pan - eleemosynary -
I bought two of these pans in an attempt to stop using non-stick teflon for
health reasons, and I was also tired of having to discard my non-stick pans once the surface was ruined, even though the rest of the pan was ok. Sitram pans are not non-stick, and I have yet to 'season' them so that they perform as a non-stick pan. Consequently I ended up scrubbing them to get them clean, but they clean easily this way, so I am satisfied. As for using the pan, this pan does cook/fry/saute well, and conducts heat fast (even on an electric burner), so that I cook at a lower temperature than my all-clad non-stick pan. They are better quality than my all-clad pan. And as for others who had trouble getting the sticker off the bottom of the pan, try soaking it with lighter fluid (works best) or 3-in-1 oil (works ok), and it should peel off relatively easily. Cooks recommend seasoning a pan like this, which is probably something I should have done before using. To do this, add 0.5 in or 1.5 cm of oil and a handful (lots) of (coarse if you have it) salt to the pan, and let rest overnight. Then heat on low heat on the stove or in the oven until the oil is very hot but not smoking. Leave the pan until almost cool, and then discard oil and salt. Wipe the pan dry. Once a pan is seasoned it should never be washed, just wiped out with a dishrag/cloth while still warm.

I wanted to get away from aluminum and especially non-stick pans for health reasons. This Sitram pan is old school cool. It feels and acts very professional. There is a different style of care for these pans than with treated pans but I find keeping the pan seasoned and maintained very easy. If this upkeep is maintained, the pan is a fabulous little egg pan, etc. My current cooktop is ceramic and this works very well with the glass top. I look forward to growing my collection of Sitram over time.

9/10/09- I now use this on my induction cooktop and am still in love. It is our favorite small pan, and we use it 1-3 times, every day.



Inferior Quality and Bad Sitram Customer Service - mitxanh -
After 6 months of use, the handle holder on the lid came off due to fatigue at welding joints. Since the other pieces also uses spot welding at the handle, I'm fearful for my safety and contacted Sitram Customer Support. This is their response

"While we have the ability to authorize replacement for the defective products that have handles coming off, we are unable to satisfy a request to credit other product that has not shown signs of being defective"

In otherwords, they're not surprised the product is defective and I'm not the only one complaining. If I'm stupid enough to buy a whole set, then I'll have to return each item as it falls apart. Too bad if the defective will maim me in the process.

Stay away from this defective and inferior product if you value your health and safety.

BTW, I contacted Amazon Customer Service and they agreed to accept the return. Love Amazon.

A Chef's View on the pros and cons of stainless steel cookware

Stainless steel is often the best in pots when you think. Used in households around the world by professional chefs, but there are some reasons why stainless steel cookware is a good choice. There are some disadvantages as well, but these are usually overshadowed by the benefits.

The advantages of stainless steel cookware are:

* Shelf. Stainless steel tends to be very tough. This type of pot, does not chip, rust, or evenFleck, at least slightly. Stainless steel is also dent and scratch resistant. It 's virtually impossible to destroy. This makes it very easy to clean, usually. The container is dishwasher safe, as a rule, able to handle going to the fridge and much more.

* Aroma preservation packaging. This type of cookware tends not to leach into food from one of its metallic properties. This means that the same pot doe no influence on the quality of taste. Furthermore, because there is no protection, non-stick coating, tendsthere is no danger of this material comes from food.

* Ability to transfer heat. Stainless steel cookware with high quality in the game, aluminum or copper, is brought used to improve heat transfer. This ensures even cooking of food. If the pot is well made, the properties of cooking almost impossible to beat or match.

* Look. Stainless steel is beautiful and is easy to see that maintained. The mirror need only a gentle rubbing or delete to bringin excellent condition.

* Recyclable. Stainless steel is completely recyclable. If a pan is not possible to have destroyed, can be saved in other ways. This makes stainless favored by those who are concerned about the waste.

I wish I could say how the pan worked. I purchased it June 2, 2006. As of July 4, 2006 and I had not received it. It is now July 17th and I just received notification that the item is going to be delayed until the middle of August! Buy this pan somewhere else.

There's something about fry pans or skillets that do not make them universally useful. Unlike a saut? pan or a saucier that can hold lots of food, by design you just can't overload a skillet and expect it to work. Its angled low sides are engineered to release as much moisture as possible when frying so you can get a crispy outer layer.

Also, you can't seem to be happy with only one kind of skillet. For example, for frying chicken, chops, steak, hamburgers or the like, you can't beat a well seasoned cast iron skillet. For frying eggs or delicate food, you'll probably reach for a non-stick skillet (sometime called an omelet pan). So, when does one need a stainless steel frying pan? In my case, I use one when I need to fry or sear something crisp and when I want to build a sauce from the flavorful stuff that`s stuck to the pan. I just can't do the same thing on a seasoned cast iron skillet, because the sauce will taste different; besides you really are not suppose to cook anything too acidic or too alkaline on cast iron. On the other hand, since nothing sticks on a non-stick pan, you won't have the good stuff stuck on the pan which will be the base for your sauce.

In all probability, you'll have a cheap iron skillet and a non-stick skillet hanging around and will ask yourself why spend money on a stainless steel skillet when you can buy a more versatile cookware such as a saut? pan or a saucier or even a rondeau? I am not reviewing one's necessity for a stainless steel frying pan. I shall review this 11" fry pan based on its merits and perceived value.

This 11" fry pan is very well constructed. It shares the same benefits (e.g. heat conductivity, heat capacity, heavy weight, and very flat bottom) that other Sitram Catering cookware offer. However, there is one design limitation you must be aware of. The copper disk at the bottom does not cover the entire bottom. The inside diameter of the cooking area is 9 ? in. while the copper disk only covers less than 8 ? in. What does this mean? If you are frying a piece of fish that is wider than the diameter of the copper disk, the sides of the fish not placed over the disc will not cook as well as the part of the fish that is over the disk. Hence, you must be careful not to have food near the sides of the fry pan. IMHO, you do not have the same limitation with a pan that uses a straight gauge or fully clad conductor (instead of a disk). For this reason, I cannot give this frying pan 5 stars.

This copper-bottomed Catering line by Sitram is the best performing line of cookware around. I have an All-Clad SS skillet that is almost exactly this size and my wife and I both like this Sitram pan quite a bit more than the AC. The thick (~2 mm) copper disc in the bottom of the this pan means that it heats much more quickly and evenly than an aluminum clad pan like AC. When you remove this pan from the heat it cools quickly, too, meaning food stops cooking when you want it too. Also, its quite easy to clean up, probably because the stainless interior seems to be a lot more smooth than in other pans. If you cook often enough to be considering a pan in this price range, just get it. You'll love copper the first time you use it!

This pan is the BEST frying pan I've ever used. I am blown away by Sitram's commercial line. I compared this pan side-by-side with the All-Clad 11-incher, while baking dutch-style pancakes - a great test in how fast the pan fries, as well as how well the heat is distributed and retained.
The Sitram fries more evenly, more quickly, and stays "smoother", i.e. it's easier to clean. I can only conclude that the copper-sandwich layer must be much thicker in the Sitram than the All-Clad. The Sitram (1770 grams) is 20% heavier than the All-Clad (1478 grams), which probably accounts for this.
Pancakes (and since that test also steaks, caramelized onions, sauces etc.) fry about 40% quicker. So upon first use of this gem, watch out, and turn the heat down if you're unprepared! It is just astonishing how much better this pan is, and that's while I was satisfied with the All-Clads. This pan will spoil you. Like me, you may never want to go back to anything else.

I thought that Amazon had shipped me the wrong model pan, or the one quart sauce pan, minus a lid. But in researching further, and looking at the customer pictures, It seems that maybe I just received a cheaper model of the Emerilware Stainless Steel 1 Quart Saucier, which is not the same pan described on the product page.

And, since I have already returned the pan I received, by mistake I thought, to Amazon and a replacement Emerilware Stainless Steel 1 Quart Saucier is on its way to me, I'm fearful that the replacement pan will be the same crappy pan, sans pour spout and thicker copper bottom, that I received in the first place from Amazon.

BTW...The replacement pan arrived today from Amazon, and I'm sorry to say it is not only the same cheap pan I received before, but had a large scratch on the side of the pan. I won't be ordering any more Emerilware Stainless Steel pots or pans on-line anymore.

The quality and materials are only half, or less, of the other Emerilware Stainless Steel pots, pans and lids that I bought last year from Amazon.

Amazon, most likely lately, has been getting counterfeit Emerilware Stainless Steel pans and selling them as the real thing.

The REAL Emeril 1 quart suacier is a great pot. And it typical does not come with a cover, that part is OK.

Unfortunately the one shipped has original Emeril/All-Clad packaging but is not All-Clad quality.

I own 14 pieces of the Emerilware Stainless Steel pots and lids, and have been impressed by the quality of materials and manufacturing of the previous items that I ordered, which is why I finally purchased the one quart pan.

Even though it did not come with a lid, that was not the cause of my disappointment with this pan. This pan, compared to the other pieces that I own, has a small bottom and is made of lighter weight materials, which makes the handle heavier than the pan.

It won't sit on a flat surface empty because the handle tips it over. If it had come with a lid that might have restored the balance. This is a poor design, and not the same weight and class of the my older Emerilware Stainless Steel pots and pans. In addition, the copper band on the bottom of the pan is only about 1/2 the size of the copper band on my other pans, plus this pan does not have a pouring spout, as shown in the picture and listed in the description for this model pan.

I should have ordered the "Simply Calphalon Stainless 8 Inch Omelette and 1 Quart Covered Sauce Pan set." for the same amount of money. That one quart pan does come with a lid, and the extra Omelet pan and lid are just a bonus.
