Skillet meals are quick and easy

For the busy cook, meals or dinner can be a life saver pan. These meals are simple, fast, tasty, and combining several food groups in a pan. Clean-up is reduced, which is also important for busy cooks. Here are some options for easy skillet meals. Try the German Skillet Dinner featuring cabbage, minced meat, rice and salad. Not like the German one? How about a Veggie Fried Chicken Joint?

German Skillet Dinner

1 tablespoon butter
1 can (16 ounces)Sauerkraut, drained
02:01 cup uncooked rice
cup chopped onions 02:01
1 pound lean chuck, browned and drained
1 teaspoon salt
4.1 tsp black pepper
1 can (8-oz) tomato sauce

a large skillet melt the butter in Spread the sauerkraut evenly over bottom of pan. Sprinkle the rice into the cabbage and onions over rice. Top rice with minced meat, salt, pepper and tomato sauce. Cover pan and cook over low heat25-30 minutes or until rice is tender.

Veggie Chicken Stir-Fry

3 skinless, boneless chicken breast
Tablespoon canola oil
2 green onions, sliced
1 tablespoon chopped garlic
4.3 teaspoon salt
1 teaspoon ground ginger
1 package (16 ounces) frozen mixed vegetables Oriental
1 cup low-sodium chicken broth
1 tablespoon cornstarch
1 tablespoon water

Cut the chicken into strips 1 inch. Heat a wok or large frying pan over medium heat until a drop of water sizzles whenfell to the pan. Add the oil. Place chicken in pan, and stir fry about 5 minutes. Add green onions and garlic and cook, stirring for 2 minutes. Stir in salt and ginger. Add mixed vegetables and chicken broth. Bring to a boil and cook until vegetables are heated through. This takes about 3-4 minutes.

Blend cornstarch and water together until smooth. Add the pan and bring to boil. Cook until the sauce is thickened. Remove from heatServe hot. Serve over white rice.
