Betty's Crispy Southern Fried Chicken Recipe

In this video, Betty demonstrates how to make homemade, country-style Southern Fried Chicken. Seasoned with salt and pepper, dredged in flour, this chicken is browned on the stove and then oven-fried until golden brown. Yum! Ingredients (for buffet-style serving): 11 pounds chicken parts, washed and dried with paper toweling (I used breasts, wings, thighs, and legs.) salt, to taste freshly ground black pepper, to taste flour, as needed (about 1 ½ cups) peanut oil, as needed (I used ¼ cup for a 13 ½-inch cast iron skillet.) butter, as needed (I used 1 tablespoon butter for a 13 ½-oz. cast iron skillet.) Prepare chicken by washing, drying, and removing excess fat, gristle, etc. Salt, to taste, working the salt into the chicken, using your hands. Place 1 ½ cups flour in a gallon-sized zip-lock bag. Dip each of the salted pieces individually into the bag of flour, and shake to coat. Set coated chicken pieces aside. Heat ¼ cup peanut oil in a large cast iron skillet over medium heat. Add 1 tablespoon butter, and continue to heat until a pinch of flour sizzles in the hot oil/butter combination. Now, place a single layer of salted and flour-dredged chicken in the hot oil. Brown on the bottom side, and then turn each piece. Place the skillet in a 400 to 450 degree oven. Oven fry the chicken for about 10 minutes, then turn each piece over. Continue to oven fry the chicken until crisp and golden. Chicken must be cooked all the way through, with no pink showing! Remove the skillet ...

Betty crispy Southern Fried Chicken recipe

This video shows Betty, homemade, country style to make Southern Fried Chicken. Carne Asada Tacos with chicken marinated onions recipe

Delicious Italian Chicken Parmesan

This tasty Italian classic has been modified a little by adding longhorn cheese in addition to the Parmesan. The recipe looks a little complicated and drawn out but it really isn't hard to do. Assembling the ingredients will take almost as long as the cooking. The cooking is done in 3 stages: First the chicken tenders are cooked. I used my favorite black iron chicken fryer skillet. Secondly the sauce is heated in the microwave, and thirdly the parts are combined and finished off by melting the cheese under a broiler.

1 pound skinless, boneless chicken breast tenders
1 1/3 cups grated parmesan cheese
1/4 cup soft bread crumbs
1 tablespoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten slightly
1 tablespoon butter
1 1/2 cups spaghetti sauce
2 teaspoon lemon juice
1/3 cup shredded longhorn cheese
1/2 teaspoon basil (dried)

Instructions:
1 - Preheat broiler
2 - Combine 2 tablespoon parmesan cheese, bread crumbs, parsley, basil & 1/8 teaspoon salt
3 - Dip each chicken tender in egg, then crumb mixture
4 - Melt butter in cast iron skillet and cook chicken tenders approximately

3 minutes per side, then set aside.
5 - Combine remaining salt, spaghetti sauce, lemon juice, and pepper.
6 - Heat sauce in microwave for 2 minutes on high
7 - Place chicken pieces in oven proof bake dish, then pour sauce over, sprinkle

with longhorn cheese and remaining parmesan cheese.
8 - Broil for 2 minutes or so, just enough time to melt the cheese topping.

Quick and Easy Healthy Chicken Recipes

If you are looking for some new quick and easy healthy chicken recipes to prepare, I've got something delicious that I would love to share with you. Prepared with a healthy body in mind. Chicken is a family favorite, so I am always searching for healthy, tasty and quick to prepare recipes.

Keeping it healthy, I always prepare my pans with PAM or simply rub olive oil on the meat rather than oiling the pan. This practice helps to moisten the meat without leaving it to swim in oil or fat. Salt is kept to a minimum while fresh herbs and a few spices are used instead. Lemon works well with many healthy chicken recipes. It's a great taste that doesn't add any fat and very few calories.

A wife and mother of three boys, I also look for quick and easy recipes that my family will enjoy. It's no fun eating diet foods when the rest of the family is enjoying their favorite meal. So many of my recipes are for the whole family. My lip-smacking Oven Baked Fried Chicken will make you think it was fried in a cast iron skillet and crisped up the way grandma used to do it. Remember: portion size is important when it comes to losing weight, even when the food is prepared in a low fat, healthy manner.

For this recipe you will need:

4 skinless, boneless chicken breasts
1 Tbsp olive oil
1/4 cup Corn Flakes, crushed
1/4 cup Bread Crumbs
Salt to taste

Rub chicken with olive oil.
Add a little salt for flavor.
Pat with bread crumbs on each side
Roll in corn flakes.

Place in prepared baking dish and bake on 350 degrees for 30 minutes. Check for doneness, depending on how thick your chicken breasts are, they should be done or nearly done.

Health Benefits: Chicken is a great source of protein that is low in fat, especially when the skin is removed. If you like the moisture that the skin provides, you can leave it on while cooking but remove it before eating to keep it low fat. Chicken Teriyaki

This court is more in the style of Japanese cuisine, like chicken is cooked on a stove, not in a wok, and separate from vegetables. I use an electric hot plate, and it works great. The dish can be made with chicken breast, but I prefer to use chicken thigh.


2 chicken breast bones skinless boneless chicken thighs skinless O 4
Teriyaki sauce
1 teaspoon garlic powder
2 tablespoons sherry
any type of vegetable for frying

Cut the chicken intosmall cut into thin strips. The thinner the better. Place the chicken in the freezer for half an hour or so. And 'firmly until the meat and make it easier to cut. Chicken Gorgonzola and Figs

Gorgonzola cheese and California fresh figs could be a new confection. The creamy gorgonzola, with its pungent blue vein, paired with the honey of the figs, compliments chicken divinely. It also makes a sensational bruschetta or a prosciutto wrapped hors d'oeuvre. Gorgonzola, an Italian blue cheese, is delicious in a walnut cream sauce over gnocchi, creamed with a few drops of brandy and served on a crostini with capers, in a dip for chicken wings and crudités, in a salad dressing over baby greens with apples, olives and pine nuts, or any other dish that requires blue cheese.

This recipe is quick and easy... just right for an impromptu dinner party. The spaghetti squash, which is a lot lower in calories and full of nutrients, strings just like noodles and will soak up the creamy wine sauce. In the time it takes to cook the squash, the chicken will be done, about 40 minutes is all it takes to make this dish, throw a salad together, and set the table. Serve this dish with your favorite salad, crusty sourdough rolls, and a bottle of good white wine. Be prepared for compliments from all corners of the table!

Ingredients:

o 1 medium sized spaghetti squash
o 4 boneless, skinless chicken breasts (about 1 pound)
o 4 slices of gorgonzola cheese (1x2x1/4 inches thick)
o 2 fresh figs, sliced in half
o Sea salt and fresh ground pepper
o 2 Tbsp olive oil
o 1 shallot, minced
o ½ cup dry white wine
o 1 cup chicken stock
o pinch of fresh thyme
o pinch of fresh rosemary
o 1 Tbsp cold butter

Method:

1. Slice spaghetti squash in half. Place in a Dutch-oven, and add enough water to come up 1- inch on the squash. Cover, bring to a boil, reduce heat to a simmer, and cook for 40 minutes or until fork tender.
2. Trim chicken breasts. Cut a 3x2-inch slit into the chicken, at the thickest side.
3. Stuff each breast with 1 slice of gorgonzola and half a fig.
4. Liberally salt and pepper both sides of each breast.
5. In a non-stick skillet, heat olive oil over medium high heat, sauté breasts on both sides just until browned, about 5 minutes each side. Remove breasts to a plate and cover lightly.
6. Sauté the shallots for 3 minutes.
7. Deglaze the skillet with the wine, stirring to incorporate the pan drippings and shallots. Add the stock, bring to a boil.
8. Add the sautéed chicken, cover and simmer for 20 minutes.
9. Remove the cover, turn breasts, add the fresh herbs, and continue cooking over medium low heat, uncovered, until chicken is done, about 10-15 minutes more.
10. Remove chicken to plate, whisk cold butter into sauce.
11. Remove squash from shell to a bowl, separating strings with a pasta rake or fork. Lightly salt and pepper to taste. The shell is brittle so be sure to remove any shell before serving.
12. Serve chicken over spaghetti squash and top with the sauce from the skillet.

I Picked up a Chicken on the Way Home From Work

I stopped at the grocery store on the way home from work tonight and found a rotisserie chicken on sale. You can just bet it went directly into my grocery buggy.

I use weekly meal plans and (usually) only go to the grocery store once a week. So, my dilemma was how to fit some chicken entrees in my plans for the week. This is how I am going to use the chicken:

My original dinner entree for kielbasa with potatoes au' gratin will become Chicken and Sausage Jambalaya. This recipe is better with andouille sausage, buy hey, I already had the kielbasa which will be great, too! This recipe will take time to prepare but can be cooked over the weekend, or when you have some time, and reheated. I really think it is better when left to sit for a day or two because the flavors will blend making it a much richer tasting dish. (Recipe from FoodNetwork is below.)

I was going to serve the traditional 7-Layer Salad but will change it to 7-Layer Chinese Chicken Salad for a scrumptious main dish salad that you can prepare in no time. (Recipe from Pillsbury.com is below.)

The longer cooking chicken pot pie will be a quick-and-easy meal using the Easy-as-Pie Chicken Pie recipe to take advantage of the pre-cooked chicken. You will find a great technique for baking the crust with this recipe. (Recipe from Pillsbury.com is below.)

Chicken and Sausage Jambalaya

1/2 cup vegetable or olive oil

3 cups chopped onions

1 cup chopped bell peppers

3 teaspoons salt

1 1/4 teaspoons cayenne

1 pound andouille, chorizo, or other smoked sausage cut crosswise into 1/4 inch slices

1 1/2 pounds cooked white and dark chicken meat, cut into 1 inch cubes

3 bay leaves

3 cups medium-grain white rice

6 cups water

1 cup chopped green onions

Directions


Heat the oil in a large cast-iron Dutch oven over medium heat.
Add the onions, bell peppers, 2 teaspoons of the salt and 1 teaspoon of the cayenne. Stirring often, brown the vegetables for about 20 minutes, or until they are caramelized and dark brown in color. Scrape the bottom and sides of the pot to loosen any browned particles
Add the sausage and cook, stirring often for 10 to 15 minutes, scraping the bottom and sides of the pot to loosen any browned particles.
Season the chicken with the remaining 1 teaspoon salt and remaining 1/4 teaspoon cayenne. Add the chicken and the bay leaves to the pot. Brown the chicken for 2 to 3 minutes, scrapping the bottom of the pot to loosen any browned particles.
Add the rice and stir for 2 to 3 minutes to coat it evenly.
Add the water, stir to combine, and cover. Cook over medium heat for 30 to 35 minutes, without stirring, or until the rice is tender and the liquid has been absorbed.
Remove the pot from the heat and let stand, covered for 2 to 3 minutes. Remove the bay leaves. Stir in the green onions and serve.

7-Layer Chinese Chicken Salad Salad

Salad

5 cups shredded lettuce

1 3-oz package oriental-flavor ramen noodle soup mix

2 cups diced cooked chicken

1 11-oz can white Shoepeg corn, drained

1 large tomato, diced

2 green onions, sliced

1/2 cup coarsely chopped peanuts (optional)

Dressing

2 Tablespoons sugar

1 teaspoon salt

3/4 teaspoon grated gingerrootv
1/2 teaspoon pepper

1/4 oil

2 Tablespoons vinegar

Directions


Arrange lettuce in bottom of large (3-quart) clear glass serving bowl.
Layer noodles and all remaining ingredients, in order listed, over lettuce.
Combine all dressing ingredients in a small jar with a tight fitting lid and shake until well combined.
Pour dressing over salad and serve immediately.

Easy-As-Pie Chicken Pie

1 Pre-made pie crust, at room temperature

1 10 3/4-oz can condensed cream of chicken soup

1 cup milk

1 cup frozen, diced southern-style hash browns

1 1-lb bag frozen mixed vegetables

1/8 teaspoon pepper

Directions


Heat oven to 400 degrees. Spray baking sheet with cooking spray. Place pie crust on baking sheet and decorate or flute edges as desired. Bake 8 minutes or until golden brown.
Meanwhile, combine soup and milk in a 12-inch nonstick skillet. Cook over medium-high heat until bubbly, stirring frequently.
Stir in chicken, potatoes, vegetables, and pepper. Bring mixture to boiling. Reduce heat to medium-low. Cover and simmer 8 - 10 minutes until heated through.
Remove skillet from heat.
Using a large spatula, remove pie crust from baking sheet and place on top of chicken mixture.
Cut into wedges and serve.

This Jamaican chicken curry recipe owes its fieriness to Scotch bonnet chili peppers and gets its interesting sweetish taste from sweet potatoes. This exotic dish can either be a simple hearty dinner or a star on the party menu that won't fail to impress your guests on special occasions.

Ingredients (for about 4 servings) - 3 tbsp Jamaican curry powder, 8 - 10 chicken thighs, 1 large sweet potato (peeled and cut into big chunks), 1 tbsp vegetable oil, 1/2 tsp ground allspice, 2 tsp minced garlic, 1 tbsp minced ginger root, 1/2 cup thinly sliced green onions, 1 Scotch bonnet pepper (minced), 2 cups chicken broth, 1/2 tsp salt

Preparation

· Combine curry powder, allspice and salt in a large bowl.
· Add chicken thighs. Make sure the spices coat chicken evenly. Cover and refrigerate for about an hour.
· In a large pot or deep skillet, heat oil over medium heat.
· Stir in garlic, green onions, Scotch bonnet pepper and ginger. Cook for about 2 minutes. Stir constantly.
· Add chicken. Cook for about 2 - 3 minutes.
· Add chicken broth and bring to a boil, then stir in sweet potato.
· Turn the heat down to low, cover and let simmer for about 40 - 50 minutes. Stir occasionally.
· Remove chicken and potato from the pot with a big slotted spoon, and place them on a serving dish. Cover to keep warm.
· Turn the heat up to medium-high and boil the sauce (uncovered) for about 5 - 10 minutes or until it is thickened.
· Pour sauce over chicken and sweet potato. Add salt to taste.

Chicken Dinner Recipes

2 tb olive or salad oil

1 t salt

1/2 lb small red potatoes cut into 1 inch pieces

1/2 bn fresh spinach about 1/4 lb, coarsely sliced

1/2 ts black pepper

1/4 c pitted ripe olives each sliced in half

2 md onions sliced 1/2 inch thick

2 tb lemon juice

2 ts unbleached all purpose flour

3/4 ts dried rosemary leaves crushed

4 lg chicken thighs (about 1 1/2 pounds)

About 40 minutes before serving:

In a 10-inch skillet, over medium-high heat, heat the olive or salad oil until hot then add the onions and cook until golden brown. Remove the onions to a bowl and set aside. On a sheet of waxed paper, mix the flour, salt, dried rosemary, and pepper, blending well, then coat each of the chicken thighs. Still over medium high heat, cook the chicken in the remaining oil in the skillet, until golden brown on all sides. Add the potatoes, lemon juice, cooked onions and 1/4 cup of water to the chicken in the skillet.

Increase the heat to high and heat to boiling, then reduce the heat, cover, and simmer for 20 minutes or until the chicken and potatoes are fork tender and the juices run clear when the chicken is pierced with a knife. Skim off the fat from the liquid in the skillet. Stir in the spinach and olives, cooking until the spinach is just wilted.

1 chicken; broiler or fryer and frozen

1 c mushrooms; canned

1 jar meatless spaghetti sauce parmesan cheese; grated

1 sm cabbage; cut in wedges

2 tb tapioca; quick cooking

In a 3 1/2 to 6 quart crockery cooker place cabbage wedges, onion and
mushrooms. Sprinkle tapioca over vegetables. Place frozen chicken pieces atop vegetables. Pour spaghetti sauce over chicken. Cover; cook on low-heat setting for 10 to 12 hours. Transfer to a serving platter. Sprinkle with parmesan cheese.

Delicious Sweet And Sour Chicken Recipe

I put this on to cook for the family on a day when I knew I wouldn't be home for dinner. They ate it all, so I didn't get a chance to taste it! They said it was really good and they want me to make it again. I definitely will, but I'll be around to eat it with them this time!

This also really works great for those that have a busy schedule and sometimes don't have time to make dinner.

You'll be pleased to know, however, that making sweet and sour chicken does not have to be difficult. Some simple tips can make the whole experience easy and fun. Go ahead to cook it and enjoy!

Ingredients of the sweet and sour chicken recipe:

12 oz (375 g) boneless skinless chicken thighs or breasts

1 tbsp (15 ml) soy sauce

4 tsp (20 ml) cornstarch

1/4 tsp (1 ml) pepper

4 green onions

2 carrots

1 sweet red or yellow pepper

3/4 cup (175 ml) chicken stock

2 tbsp (25 ml) rice or cider vinegar

2 tbsp (25 ml) ketchup

4 tsp (20 ml) granulated sugar

1/4 tsp (1 ml) salt

4 cups (1 l) bean sprouts

2 tbsp (25 ml) vegetable oil

1/3 cup (75 ml) blanched almonds

2 cloves garlic, minced

1/2 tsp (2 ml) sesame oil

Directions of the sweet and sour chicken recipe:

Cut chicken into bite-size pieces. In bowl, mix together chicken, 1 tsp (5 ml) of the soy sauce, 2 tsp (10 ml) of the cornstarch and pepper until chicken is coated. Set aside.


Cut onions into 1-inch (2.5 cm) lengths. Thinly slice carrots. Seed, core and cut red pepper into 1-inch (2.5 cm) chunks. Set aside.


In small bowl, dissolve remaining cornstarch in remaining soy sauce; stir in stock, vinegar, ketchup, sugar and salt until sugar is dissolved. Set aside.


In microwaveable bowl, cover and microwave bean sprouts and 1 tbsp (15 ml) water on high for 3 minutes; drain and transfer to serving plate.


In wok or skillet, heat oil over high heat; stir-fry chicken and almonds, in 2 batches, until lightly browned, about 2 minutes per batch. Remove with slotted spoon; set aside.


Add garlic, green onions, carrots and red pepper to pan; stir-fry just until pepper and carrots are tender, about 3 minutes. Add chicken mixture; stir-fry for 30 seconds. Add stock mixture and bring to boil; cook until thickened and juices run clear when chicken is pierced, about 2 minutes. Stir in sesame oil. Pour over bean sprouts.
