Healthy Eggs in Purgatory

Just like there are many ways to cook an egg, there are just as many variations on this dish. However, my "whole foods" version is super veggie-forward and ultra healthy. It's also rich in fiber, antioxidants and phytochemicals. This is a guilt-free, figure-friendly whole foods meal the whole family will love. If you have some especially hungry family members I suggest serving it with a side of steamed short grain brown rice (use a rice cooker for this).

Ingredients Serves: 4 or 5
1 Spanish onion, peeled and roughly chopped
1 or 2 whole carrots, roughly chopped
2 tablespoons extra virgin olive oil (such as Costco's Kirkland brand)
3 to 4 cloves garlic, chopped
Sea salt (such as Costco's Kirkland brand), to taste
2 packages (9 ounces each) frozen artichoke hearts (such as Bird's Eye), thawed
1 28-ounce can crushed tomatoes
2 tablespoons drained capers
Crushed red pepper, to taste
5 organic, free-range eggs

1. Place the onion and carrots in a food processor; pulse three to four times until just finely chopped (don't over process or onions will turn into a soggy mess.) Set aside.

2. Heat extra virgin olive oil in a large cast-iron skillet (or other oven safe skillet) over medium heat. Add the garlic and sauté 30 seconds. Add the chopped onions and carrots. Season with salt to taste. Sauté 2 to 3 minutes, or until onions are soft.

3. Add the artichokes and cook 1 minute. Add the tomatoes, capers and crushed red pepper to taste. Reduce heat and simmer 15 minutes.

4. While sauce is simmering, preheat the oven to 375 degrees.

5. Using the back of a spoon, make 5 evenly spaced indentations in sauce for holding the 5 eggs. Crack 1 egg into each indentation in sauce. Bake until egg whites and yolks are softly set, about 12 minutes. Serve warm.

Quick and Easy Healthy Chicken Recipes

If you are looking for some new quick and easy healthy chicken recipes to prepare, I've got something delicious that I would love to share with you. Prepared with a healthy body in mind. Chicken is a family favorite, so I am always searching for healthy, tasty and quick to prepare recipes.

Keeping it healthy, I always prepare my pans with PAM or simply rub olive oil on the meat rather than oiling the pan. This practice helps to moisten the meat without leaving it to swim in oil or fat. Salt is kept to a minimum while fresh herbs and a few spices are used instead. Lemon works well with many healthy chicken recipes. It's a great taste that doesn't add any fat and very few calories.

A wife and mother of three boys, I also look for quick and easy recipes that my family will enjoy. It's no fun eating diet foods when the rest of the family is enjoying their favorite meal. So many of my recipes are for the whole family. My lip-smacking Oven Baked Fried Chicken will make you think it was fried in a cast iron skillet and crisped up the way grandma used to do it. Remember: portion size is important when it comes to losing weight, even when the food is prepared in a low fat, healthy manner.

For this recipe you will need:

4 skinless, boneless chicken breasts
1 Tbsp olive oil
1/4 cup Corn Flakes, crushed
1/4 cup Bread Crumbs
Salt to taste

Rub chicken with olive oil.
Add a little salt for flavor.
Pat with bread crumbs on each side
Roll in corn flakes.

Place in prepared baking dish and bake on 350 degrees for 30 minutes. Check for doneness, depending on how thick your chicken breasts are, they should be done or nearly done.

Health Benefits: Chicken is a great source of protein that is low in fat, especially when the skin is removed. If you like the moisture that the skin provides, you can leave it on while cooking but remove it before eating to keep it low fat. Remember every cell in your body depends on protein for growth, be sure to have a serving of protein with every meal.

3 simple recipes that are kid a healthy meal

As a mother of two children, I always want the best for my children. So I'm always looking for recipes that are health and nutrition for infants. It is only for meals, or just three times for main food of the day, I'm all for it.

If you are looking for a way to make something, then here are three easy recipes for healthy eating:

Before Extra Crispy French toast. Beat 2 eggs. Add ½ cup milk ¼ teaspoon sugar¼ teaspoon cinnamon. Coat each slice of bread with egg mixture by dipping each slice in the mixture one at a time and soak it well. Heat oil. Cook the bread slices on a grill or a frying pan over medium heat 2-3 minutes per side. Gently press the bread with cooking, so the French bread is crisp and golden in the center. Makes 6 slices. (Toppings are proposals cheese, honey and pure maple syrup).

According to Hamburger. Place in a bowl, mix 1Pounds of ground beef, chopped ½ onion, ½ teaspoon garlic salt, garlic (you can use regularly, but the garlic salt is tasty and much easier than real garlic mix) ½ teaspoon salt and 1 / 8 teaspoon pepper . Make 4 patties. Fry (not burn) and drain on paper towels. Heat oil in a pan, hamburger buns. Fry 4 eggs. Burger Patty put on bread. Top with fried egg, slices of cheese, tomatoes, lettuce and your favorite burger trimmings(Mayonnaise, mustard, etc..) Serves 4.

Third Chicken Pizza. A friend of mine swears by this recipe to me, that their 5 years, has something different to eat hot dogs and fried chicken. Clean and Cube 2 boneless chicken breasts (preferably without the skin so that it was healthy), marinated in hot sauce or barbecue sauce. Heat 2 tablespoons extra virgin olive oil in a skillet over medium heat. Add hot chicken and cook until cooked. Pending chickencook, bake pizza dough (my friend bought pizza dough in a box instead of a floor), 8 minutes at 400 degrees Fahrenheit. After cooking, the pizza crust, top with mozzarella and baked chicken, then put some extra sauce (hot sauce or barbecue sauce). Put in the oven for another 3-5 minutes - this is the cheese melts and finish the browning of the crust a bit '. This is optional, but you can try, served with a little 'blue cheese dressing on the cupSide for dipping.

Three simple and healthy meals that will surely please your children. And can love both is that they do not realize that only a lot of additional nutrients, the only love a mother, cook, give him a hand eating.

Eating healthy? Get Out the cast iron skillet

When I was a child, I believe that every family in the neighborhood had a cast iron pan. The pots were more or less the same thing, but the meals that came from them, were as varied as the families. Our closest neighbors were from St. Paul, MN, and established Swedish meatballs in a pan.

Healthy Grilled Cheese Sandwiches

Make a healthier Grilled Cheese Sandwich than the one we ate when we were growing up.

Recipe:

Ingredients:

2 slices of Nature's Own 100% Whole Wheat Bread
2 slices of 2% fat American cheese
2 seconds of olive oil cooking spray

Instructions:

1. Preheat skillet or pan with medium heat
2. Spray pan with 1 second of cooking spray
3. Place both slices of cheese between bread slices
4. Place cheese sandwich in preheated skillet
5. When bread is golden, spray one second cooking spray in pan and flip sandwich
6. Remove from skillet when the other side is golden

Facts:

-Protein per serving: 16.0 grams

Commentary:

I love this recipe and eat grilled cheese sandwiches often. These sandwiches taste great and are very easy to prepare. These sandwiches are also cheap and healthy because they are made with:

Healthy Biscuits - A Quick, Easy Way to Start the Day

If biscuits and gravy are a favorite breakfast treat, then nobody has to sell you on the idea of baking biscuits in the morning.

We're not talking about those that originate in a refrigerated tube, of course, but the real thing, made from scratch. The smell of such delicacies baking in the morning can rouse a reluctant kid out of bed on school mornings.

But most people don't need another time sucker in their morning routine, nor in the dinner routine, when a quick side dish to go with a stew, chowder or soup is required.

What you do need is a quick, easy way to make biscuits, pancakes, waffles and more. While there are numerous mixes on the market, they may be little more than flour, salt, baking powder and water. It's easy to make your own biscuit and pancake mix out of ingredients you know will provide healthy, solid nutrition.

In the U.S., a biscuit is a small form of bread made with baking powder or baking soda as a leavening agent rather than yeast. Biscuits, soda breads and corn bread are sometimes referred to as quick breads to indicate they don't need time to rise before baking. Sweet variations of the biscuit are sometimes called scones.

Add more liquid and maybe an egg and some oil to a standard biscuit recipe, and it becomes a pancake batter. A little more egg, and you have the makings of a waffle.

Since they're all quick breads, the main difference between most biscuits, pancakes, waffles and even dumplings is the amount of liquid added and the method of cooking. A good biscuit mix should be able to accommodate most of these recipes.

For best results, use a double-acting leavening agent in your biscuit mix.

Single-acting baking powders are activated by moisture, so recipes with this product must be baked immediately after mixing. Double-acting powders react in two phases and can stand for a while before baking. With double-acting powder, some gas is released at room temperature when the powder is added to the dough or batter, but the majority of the gas is released after the temperature of the dough increases in the oven or on the griddle.

For biscuits, add just enough water to milk to create a soft dough, knead lightly, roll or pat flat and cut out rounds. If a touch of extra liquid is added, the doughs texture changes to resemble very stiff pancake batter, so that small spoonfuls can be dropped onto the baking sheet to produce drop biscuits, which are more creative in texture and shape.

For pancakes or waffles, mix the wet ingredients first, then add the mix to the liquid and stir briefly. Overmixing will result in tougher cakes, so its OK to leave lumps. Let the batter sit for a few minutes before pouring by 1/4 - to 13-cupfuls onto a hot griddle or waffle iron.

Few items in your baking pantry will be as versatile as a good biscuit mix.

Dumplings

2 C basic biscuit mix

2/3 C milk

Mix together until a soft dough forms, then drop by spoonfuls onto a boiling stew. Cook uncovered for 10 minutes, then cover and cook another 10 minutes. Makes about 10 dumplings.

Healthy Biscuit Mix

5 lbs all-purpose flour, minus 4 C

3 C whole wheat flour

1 C flax meal

1 C soy flour

2½ C dry milk

¾ C double-acting baking powder

3 TBS salt

5 TBS wheat germ

½ C sugar

2 TBS cream of tartar

4 C shortening

Combine first six ingredients in a large bowl, and stir well. Cut in shortening until mixture resembles coarse meal. Store at room temperature in an airtight container.

Biscuits

1 heaping C healthy biscuit mix

About 3 TBS water

Combine mix and enough water to form a soft dough in a mixing bowl. Shape into a ball, knead about 10 times on a lightly floured surface. (Don't overknead or the biscuits will be tough.) Flatten out and roll or pat to ½-inch thickness. Cut dough into biscuits, put on a greased cookie sheet or in a greased cast iron skillet. Bake at 400 degrees for about 25 minutes or until browned. Yields 5 biscuits.

Pancakes

½ C milk

1 egg

1 TBS vegetable oil

1 C healthy biscuit mix

Combine first three ingredients, blend well. Add biscuit mix, stir until smooth. (If thicker batter is desired, add more flour.) Drop batter on lightly greased hot griddle, and cook until pancakes are browned on both sides. Yields about five 4-inch pancakes.

Basic Biscuit mix

10 C all-purpose or bread flour

1/3 C baking powder

1 TBS salt

2 C shortening

Sift flour, baking powder, and salt together in a large bowl. With two knives or a pastry blender, add the shortening in spoonfuls and cut it in until the mixture is the texture of coarse cornmeal. Keep mix stored in a labeled, tightly closed container. It will keep on the pantry shelf for up to six months in dry weather. In hot or humid weather, it is a good idea to refrigerate the mix.

Yields about 10 cups of mix.

Easy Ground Beef Recipes That Are Healthy and Delicious

Looking for some healthy and easy ground beef recipes that do not require a lot of time to make? Below are 3 delicious ground beef recipes that are filling and real crowd pleasers.

Just because you are cooking with ground beef, does not mean it has to be unhealthy. Most of the ground beef you find in supermarkets today is loaded with fat, cholesterol and hormones, but more and more supermarkets are starting to provide healthy organic meats to consumers, so hopefully you should be able to find healthy ground beef in your area.

To make the following recipes even healthier try and use all organic and low sodium ingredients.

THE RECIPES:

EASY SALISBURY STEAK RECIPE

Here is a little tip to keep in mind as you are making this delicious ground beef recipe. There is a chance that your ground beef steaks can fall apart while cooking. To prevent this from happening, form your steak patties and put them in the refrigerator for 30 minutes or so before you start cooking. This will help hold your steaks stay together.

Ingredients:

1 1/2 pounds lean ground beef

1 egg

1 tablespoon Worcestershire sauce

1 small onion finely chopped

1 garlic clove chopped

1 tablespoon montreal steak seasoning

Salt and Pepper to taste

3 tablespoons of extra virgin olive oil

1 small package of freshly sliced portobello mushrooms or by them whole and slice yourself

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups beef stock

Directions:

1. In a large bowl combine the ground beef, egg, garlic, onion, steak seasoning, Worcestershire sauce and salt and pepper. Mix well with your hands. From the mixture, make steak shaped patties that are about 2 inches thick.

2 Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the ground beef patties and cook about 4 minutes per side until the outside of the steaks are nicely browned and the juices run clear. Remove the steaks and cover with foil to keep them warm.

3 Add the rest of the olive oil along with the butter to the same pan. Add your mushrooms and then cook over medium heat until they are tender. Approximately 5 minutes. Season the mushrooms with salt and pepper to taste.

4. Add the flour to the mushrooms, mix and cook for about 2 minutes. Slowly add in your beef stock. Stir and cook until your sauce has thickened.

5. Pour gravy over steaks and serve.

EASY ITALIAN STYLE MEATLOAF RECIPE

I grew up in an Italian Family and I cannot think of a better way to cook meatloaf. Enjoy this delicious ground beef recipe using fresh italian herbs and garlic.

Ingredients:

1 1/2 pounds lean ground beef

2 eggs

1 7 ounce jar roasted red peppers chopped

1 onion chopped

2 cloves of garlic chopped

1 cup of bread crumbs

1 teaspoon of salt

1/2 teaspoon of freshly ground black pepper

1 tablespoon balsamic vinegar

1 tablespoon Worcestershire sauce

1/2 cup grated Parmesan Cheese

2 tablespoons chopped fresh basil

1 tablespoon chopped fresh parsley

2 cups of prepared tomato sauce

2 tablespoons extra-virgin olive oil

Directions:

1. Preheat your oven to 350 degrees F.

2. Heat a medium sized saute pan over medium heat and add 1 tablespoon of olive oil. Add your onion and garlic and saute until soft. Remove and set it aside on a plate to cool.

3. Grab yourself a large mixing bowl.

4. Add the cooled onions and garlic along with the the rest of your ingredients, except the tomato sauce, and combine. Mix together well with your hands and form into a loaf and add it to an oiled oven safe tray. Top the loaf with 1 cup of the prepared tomato sauce. Make certain that you spread the tomato sauce evenly over the top of the loaf.

5. Bake for about 1 hour or when the internal temperature of the meatloaf reaches 160 degrees F. Remove from the oven and let it sit for about 5 minutes. Slice it up and serve.

Heat the remaining tomato sauce if desired and use for dipping.

GREEK STYLE HAMBURGER RECIPE

For our last recipe why not make some delicious burgers? The preferred method for cooking these burgers is on the grill, but they will still be quite tasty if fried on the stovetop.

Greek Style Hamburger Ingredients:

1 pound of lean ground beef

1/2 cup crumbled feta cheese

1/2 cup chopped greek olives

1 small red onion chopped

3/4 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 package of hamburger rolls or pita bread

Hamburger Sauce Ingredients:

1 (16 ounce) container low-fat plain yogurt

1 tablespoon chopped fresh mint leaves (more or less to suit your taste)

1 tablespoon chopped fresh parsley (more or less to suit your taste)

1 clove of garlic minced (add more or less to suit your taste)

1 tablespoon of olive oil

2 teaspoons of lemon juice

1/2 cup peeled, seeded and finely diced cucumber

Sauce Directions:

Prepare the sauce for your burgers first and put in the fridge until your burgers are done.

1. In a mixing bowl, combine your olive oil and lemon juice.

2. Now add in your yogurt making sure that you mix it well with the olive oil.

3. Add your garlic, cucumbers, parsley and mint leaves and stir well.

Burger Directions:

1. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the chopped red onions and cook until tender, about 5 minutes. Put the onions aside into a large mixing bowl and allow them to cool.
